Quick Peanut Butter Bars (GF)

This last weekend, after another disappointing store-bought protein bar, I decided that it was time to create my own peanut butter bar. I’m still perfect-ing the replica bar, but during my experimentation, I developed a quick and delicious protein bar for you that takes only three ingredients, takes less than five minutes of prep, and no baking (unless you want). That is, in my book, practically perfect.

Peanut Butter Bars (GF)

Makes 8 bars

Ingredients:
2/3 c peanut butter (I prefer crunchy)
1/2 c egg white powder (more or less depending on consistency of the dough)
1/2 c honey

Instructions:
1. Combine the peanut butter and honey; add the dry egg whites in small increments until a dough is formed. You want the dough to be moldable, the consistency of play-doh (yum, what an image)!

2. Press the dough into a lightly greased glass loaf pan. Freeze for 30 minutes.

3. Cut into 8 equal-sized bars and refrigerate until consuming.

A protein bar that takes five minutes to make and five seconds to eat? I’m sold.

Have a few more minutes? Try baking these! They make the protein cookies ever. Just pre-heat your oven to 375 and shape the dough into a bar shape (or ball, cookie, whatever) and bake for 5-7 minutes or just before they start to brown. Divine!

  1. I’m so glad you posted this. We are living in a tiny studio apartment right now with a tiny kitchen. I want to make some sort of treat but without using every ingredient in the world and not having to turn on the tiny oven. This is going on my list!

I leave out kitchen a disaster area because I hate opening every single cabinet more than once to make something…drives joe nuts but he can deal πŸ˜‰ stuff like this is my favorite to make on the weekends when I’m food prepping too but feeling incredibly lazy and unmotivated….even i can handle five minutes πŸ˜‰

    Question – do you have a good recipe for a non-nut, vegan chocolate chip cookie recipe? I found a few recipes, but I love the ones you share so I figured I would ask!
