Sauerkraut-Avocado Salad

I’m not sure if I’ve talked about this thing of beauty in detail yet, but I’m about to show you the secret for the BEST salad ever.

And there isn’t even a dressing required (but plenty of filling fats and protein).

This salad is filling, tasty and doesn’t require you to do much except mix the ingredients and eat. It’s my go-to lunch and filled with healthy probiotics, fat and greens. You don’t even have to make or buy a salad dressing (and you won’t miss it either)!

Trust me, it doesn’t get easier (or more delicious) than this.

Sauerkraut-Avocado Salad

Serves one as a main dish, or 2-3 as a side

Ingredients:

3 cups mixed greens (or any greens of your choice)

1/4 c sauerkraut

1/2 ripe avocado, diced

1 medium tomato, diced

1/4 c sliced red onions (more or less to taste)

1 t cayenne pepper (or to taste)

1 T fresh corn

2 T diced cucumber

Optional: Banana peppers, pickles jalapeños, or capers

Instructions:

Combine all ingredients right before eating, and mix so that the avocado and sauerkraut form a dressing over the greens.  Enjoy immediately (don’t let this one sit for long as you don’t want to greens to wilt). To make this a full meal, add chicken (shredding a rotisserie chicken is my favorite go-to) or add garbanzo beans and/or a healthy serving of pepitas.

If you don’t think this is the best (and easiest) salad you’ve ever eaten, I’ll eat my words…

    • No worries! I’ve had good luck with canned sauerkraut too. Just make sure it is in glass and organic! It’s really easy to make though – just takes time!

  1. Yummmmmm! I looooove avocado and sauerkraut together! I used to make avocado reubens as often as possible– the avocado replaces the meat. Soooo good. I totally want to make this salad!
