I’m not sure if I’ve talked about this thing of beauty in detail yet, but I’m about to show you the secret for the BEST salad ever.
And there isn’t even a dressing required (but plenty of filling fats and protein).
This salad is filling, tasty and doesn’t require you to do much except mix the ingredients and eat. It’s my go-to lunch and filled with healthy probiotics, fat and greens. You don’t even have to make or buy a salad dressing (and you won’t miss it either)!
Trust me, it doesn’t get easier (or more delicious) than this.
Serves one as a main dish, or 2-3 as a side
3 cups mixed greens (or any greens of your choice)
1/4 c sauerkraut
1/2 ripe avocado, diced
1 medium tomato, diced
1/4 c sliced red onions (more or less to taste)
1 t cayenne pepper (or to taste)
1 T fresh corn
2 T diced cucumber
Optional: Banana peppers, pickles jalapeños, or capers
Combine all ingredients right before eating, and mix so that the avocado and sauerkraut form a dressing over the greens. Enjoy immediately (don’t let this one sit for long as you don’t want to greens to wilt). To make this a full meal, add chicken (shredding a rotisserie chicken is my favorite go-to) or add garbanzo beans and/or a healthy serving of pepitas.
