Hearty Whole Wheat Bread Recipe
Makes 2 loaves
2 1/2 c warm water (110 – 115 degrees C)
1 1/2 TBSP yeast
7 c whole wheat flour, divided
1/3 c agave or honey
1/3 c applesauce
1/2 tsp salt
Two bread loaf pans
Preheat oven to 350 degrees.
Add warm water to large bowl or mixer with dough hook. Add yeast and 2 cups of flour. Stir and let sit until mixture becomes bubbly (about 10 minutes)
Add agave (or honey), applesauce, salt and remaining flour. If using a mixer, hook dough until well mixed and surface looks bouncy and satiny smooth (3-4 minutes). If mixing by hand, use large spoon to mix ingredients together. Dust a little flour on clean counter surface and dump out dough. Knead until dough is well-mixed and holds its shape into a ball (5-6 minutes). Surface should be satiny smooth.
Spray loaf pans with non stick cooking spray. Divide dough in half and form into two oblong shapes. Place dough inside pans; cover loosely with a clean dish towel and let rise in a slightly warm place in your kitchen. I place mine on top of the oven while it is preheating. When loaves have formed a dome shape just above the rim of the pans, place in center rack of oven and bake for 30 minutes.
Remove loaves from oven and turn out immediately onto a cooling rack. Allow bread to cool slightly before slicing.
