Blue crush green smoothie

I drink a lot of smoothies, and as the summer gets closer, they become my favorite breakfast, post-run meal, and bedtime snack!

One of my favorite green smoothies isn’t exactly green (surprised?).  I like to start every day with a green smoothie. They are filling without being bulky, and fuel whatever my workout brings. One of my favorite combos includes Whole Foods frozen Wild Blueberries. These delicious berries make for an amazing smoothie – and is great for beginners who are reticent to try green smoothies because of the color.

Blue Rush Green Smoothie

Ingredients:

3/4 cup blueberries
1 T walnut butter (or 1/8 c chopped walnuts)
1 c soy milk (plain, unsweetened)
1 c spinach
1 t coconut oil (or more, if you like the taste)
1 t cinnamon

Instructions:

Blend. Add a little stevia if you like it a little sweeter, but I don’t think it really needs it!

Enjoy.

  2. Prior to blending it looks like the craziest bubble tea ever. Confession: I have not had bubble tea, and likely never will (order one, I would try it) because there was a bubble tea shop right next to my apartment in NYC and it got to the point that I just got annoyed seeing it. Yeah I’m that type of person, as we all know. I haven’t tried walnut butter yet. I do like cashew butter, though. But I like cashews>walnuts.
    I can’t wait to be able to run in the heat so that I can come home and terrify my cat with a giant green smoothie.

    • I’ve never tried bubble tea. Haven’t seen the point. I don’t like chunks in my drink. Probably why I don’t like chia kombucha either. So I’m with you. And every night before I go to bed, I wish injury-free juju on us. I am confident it will work.

  3. Looking forward to the linkup! I’ve been on a bit of a smoothie kick as well, and I also resolved to have at least 2 a month. I’ve done pretty well so far and can’t wait to share! Your recipe sounds great as well…I created a similar one the other day and it was delicious..;.the sad thing is, I forgot to write down the ingredients! Looks like I’ll have to figure out a way to recreate the magic 😦

  4. I looooove smoothies! I always add a ton of spinach too. It magically disappears into the background 🙂 Great tip about the blueberries to disguise the green colour -some people are turned off by this for sure! Not me of course 😉
