I drink a lot of smoothies, and as the summer gets closer, they become my favorite breakfast, post-run meal, and bedtime snack!
One of my favorite green smoothies isn’t exactly green (surprised?). I like to start every day with a green smoothie. They are filling without being bulky, and fuel whatever my workout brings. One of my favorite combos includes Whole Foods frozen Wild Blueberries. These delicious berries make for an amazing smoothie – and is great for beginners who are reticent to try green smoothies because of the color.
Blue Rush Green Smoothie
3/4 cup blueberries
1 T walnut butter (or 1/8 c chopped walnuts)
1 c soy milk (plain, unsweetened)
1 c spinach
1 t coconut oil (or more, if you like the taste)
1 t cinnamon
Blend. Add a little stevia if you like it a little sweeter, but I don’t think it really needs it!
