These apricot bars are full of the flavors of Turkey (according to Turkish Flavors , which is also a super cool and informative website about Turkish cuisine). These are some of my favorite bars – they combine my favorite fruit (or, one of them) with honey, and the result is delicious.
Raw Apricot Turkish Delights
Makes 9 bars
1/2 c raw walnuts
2/3 c dried apricots
1/2 c raw almond butter
1/4 t salt
1 t cinnamon
touch of honey
1. In a food processor, chop the walnuts until a fine powder
2. Add the apricots, salt, and cinnamon and process until a evenly mixed (and apricots and well-chopped)
3. Add the almond butter and honey as desired and mix until the mixture is sticky
4. Press into a glass pan and chill for at least an hour.
