Easy Tomato Soup (GF, V)

Today, I decided to try my hand at a tomato soup. It’s always been a comfort food for me – and I have easy access to a jar or two of my mother’s organic garden tomatoes, which have the best flavor and are perfect to be highlighted in a tomato soup.

This recipe is divine – almost tastes like the Campbell’s soup I was raised on, just with better, real flavor and better ingredients. Since Tumeric is such a superfood, I added a tablespoon and found it only enhanced the rich tomato flavor, but if you do not like tumeric, it is certainly optional.

Easy Tomato Soup (GF,V)

Ingredients:

4 cups whole tomatoes (fresh or canned)
1 T basil
2 t oregano
1 t salt
1 white onion, chopped
2 cloves garlic, minced
1 c vegetable stock
1 T Frank’s Red Hot (or hot sauce of choice)
1 T Tumeric (optional)

Instructions:
1. Briefly brown the onion and garlic before adding the remaining ingredients. Break up the tomatoes with a spatula as you bring the soup to a boil.
2. Reduce heat and let simmer until the onions are soft and the soup reduces to a thick “stoup.” Remove the soup from heat.
3. In 2-3 cup portions, blend the soup until it is smooth. Repeat until the entire soup is blended.

    • Me too! Sometimes I think back on things and think “that wasn’t really that bad” but every time I think about this I’m like “how am I not in a hospital?” Ha!

  1. I absolutely CANNOT run when there’s any ice on the ground, so I too am waiting for the thaw. Really glad you are okay after your near-miss with that car–so scary!
