Peanut Butter Cookies with chocolate pieces (GF)

Because I always want a peanut butter cookie, I thought I’d share one of my favorites. These Peanut Butter with dark chocolate pieces pair my two favorite ingredients, peanut butter and dark chocolate, and are gluten-free (because, of course they are).

Peanut Butter Cookies with Dark Chocolate Pieces (GF)
Makes 40 cookies

1 c brown rice flour
3/4 c buckwheat flour
1/4 t salt
1 egg
2 T almond milk
1 t vanilla
3 T butter, softened
1/2 c peanut butter
1/3 c sugar
1/3 c brown sugar
1 package dark chocolate broken into small chunks

Instructions. Preheat the over to 375. Roll small balls (1/2 T size) and place onto a cookie sheet. Bake for 8 minutes and then remove and press the chocolate pieces into the dough.


Return to the oven and bake for 2 more minutes. Cool on a wire rack or paper towel.


I’m pretty positive the dark chocolate makes this healthy. I eat them with a glass of red wine and call this a “superfood” meal.

I’m not kidding.

    • It’s one of my favorite gluten-free flours – but if you don’t need to be gluten-free, you can easily substitute whole wheat pastry flour for all of the flour in this recipe.


  1. My favorite cookies happen to be anything with chocolate and peanut butter. My weakness, and I’m always looking for healthier versions of the traditional recipes. I’ve tried the ones made with chickpeas (wonderful) but I will definitely give these a try.


  2. Passing this recipe on to my two daughters who want to make cookies to bring to their grandparents’ house for our New Year’s Eve celebration. They have decided to use Lindt dark chocolate squares (grandparents are Swiss and love Lindt!). Can’t wait to taste test! 🙂 Thanks for the recipe!
